Sandy’s Cretan Tzatziki
Since we have moved to Crete we have been eating Tzatziki in huge quantities – the whole family loves it. Sandy has tried a few different recipes, has dabbled with quantities and makes literally the best tzatziki I’ve ever tasted. The yoghurt provides amazing probiotics for the gut and garlic is one of the best natural infection fighter and immune stimulants.
Ingredients:
5 garlic cloves
1 kilogram of full cream Greek yoghurt
3 small cucumbers
2 Tbs oil
Sea salt and pepper to taste
Dill if desired
Sprinkle of love
Preparation:
Grate the cucumbers and squeeze and drain to remove excess juice. Crush or finely grate the garlic and add sea salt, pepper and oil. Put the yoghurt in a large bowl and stir in the garlic and oil mixture and then the cucumber. Mix thoroughly. Place in as sealed tub and store in the fridge.
Serve as an appetiser or as an accompaniment to meals.
We love it with mashed potato and with spinach pie.

Sounds great Sandy, will have to make it for our Cup Day camping weekend. Can just taste it on some sizzling home grown lamb on the Barbie
