    LUISA’S APRICOT KERNEL TONIC & LIQUEUR

    Apricot kernels are high in iron, potassium and phosphorus, and one of the best sources of vitamin B17. They help to maintain general health and well-being, hence they will strengthen your ability to resist infections like colds and flu.

    Ingredients

    1 Litre of Brandy or similar spirit (in Crete we use Raki) – a alcohol free alternative would be to use Glycerine
    Five big handfuls of dried apricot kernels
    10 Cinnamon quills broken up
    Handful of cloves
    1 Kg of raw sugar
    A 2-3 litre glass jar

    Method

    Place the alcohol into a clean glass jar
    Add the sugar and shake vigorously.
    imageWash the apricot kernels thoroughly to make sure there is no leftover dust or bugs.
    imageBreak up the half the apricot kernels with a rock or other hard implement, place in the jar. I have thought and thought about why this is the case that you don’t open them all – but Luisa said that is what she has done forever so I’m going to trust her on that.
    Add the rest of the kernels whole in the jar.
    imageAdd the broken up cinnamon quills and cloves.
    Tighten the lid and shake vigorously.
    Leave the jar in a sunny spot for 40 days.
    imageShake the jar each day to make sure the sugar dissolves.
    After at least 40 days drain the liquid (into a clean glass pot or stainless steel pot) through a cheese cloth or cotton tea towel.
    Place the syrup into clean bottles (preferably amber) and store in a cupboard.
    Use a tablespoon of the liquid each say as an energy tonic or enjoy a small glass as a liqueur – like having a port after dinner.
